It doesn't have to be a tradeoff.

The world of mezcal is a complex one – often filled with black and white views about what is right and wrong, traditional and modern. The latter being scuffed at as a threat to everything good about mezcal. Why is it that tradition supersedes new practices that can be better for the community and environment? Why can’t we have both? We don’t believe it has to be either or. 

While not an easy thing to do, we believe that the key is to identify and grasp onto values deemed worthy of conservation, and then press forward on changing those things that can create a greater good. Tradition is no excuse for turning a blind eye to the impacts of mezcal making onto the environment and the people. And innovative sustainable practices cannot blind us from understanding and caring for the tradition that has been passed down for generations. Like everything in life, it is about achieving a balance. The truth is, our world is changing fast, and it is up to us to build upon our traditions to create new ones that uphold our current values and realities.

Since the beginning, it has been incredibly important to build strong bonds with the Morales Garcia family so that they can continue crafting their traditional recipe, following natural fermentation processes, all while making strides towards caring for our finite water resources. Part of ensuring that the tradition of making mezcal lives on is in fact to safeguard our environment and the people who rely on its wellbeing.
